Coconut Almond Bars

 

I'm a bit of a free spirit in the kitchen, as I am in life, which means I usually just go with the flow with recipes. I often don't follow instructions completely or ingredient list and when I create my own, I just go with my intuition and taste buds. Let's say that's my creative side! The orange blossom water makes it just delicious and goes perfectly with almonds and cashews.

Energy bars are great to bring on hikes, before/ after a workout, on the plane or for breakfast on the go. It will give you energy and fill your belly with goodness vibes.

These coconut almond energy bars are quick and easy to make. They're vegan, gluten-free,  dairy-free and sugar-free and rich in healthy fats and contain protein.

Cashew nuts: Rich in vitamins E, K, B6 ; Contain minerals like copper, magnesium, phosphorus, iron, zinc, selenium.  They lower blood pressure, protects against heart disease, good for bone strength and joint flexibility and also reduce the frequency of migraines.

 

Almonds:  rich in vitamin E, which is good for your skin and complexion, minerals like copper and manganese. They boost your energy, good for your heart's health, bone strength and can help you lose weight.

Ingredients:

  • 1 cup of almonds
  • 1 cup of shredded coconut
  • 1 cup of cashew nuts
  • 2 tbsp of almond butter
  • 1/2 tsp of vanilla powder
  • 4 tbsp of water (add more if not sticky enough)
  • 10-20 drops of orange blossom water - the amount of drops depends of the quality of your orange blossom water, just taste and see how you like it! ;)

 

Directions:

Place all the ingredients in a food processor. Blend until you have a sticky paste. You may have to scrape the sides to keep the mix together (when your processor is off). Place the mix in a container or dish with parchment paper so it is easier to remove. Press down evenly to have a firm texture. Keep in the refrigerator for 2-3 hours before enjoying them or in the freezer if you're in a hurry. Take the parchment paper out and cut into bars or squares. Sprinkle some coconut on top and have a bite of deliciousness!
